Crispy Sweet Chilli Chicken with Rice

Ingredients

  • Fresh chicken breasts ( or buy fresh diced chicken)
  • Basmati rice
  • Broccoli
  • 2 eggs
  • Corn flour
  • Plain flour
  • All purpose seasoning
  • Chilli flakes
  • 250 ml sweet chilli sauce
  • Red onions
  • sunflower oil
  • Olive oil
  • 4 Tbsp dark soy sauce
  • 3 cloves of garlic
  • 150 ml cold water
  • Sesame seeds (optional garnish)
  • Scallions (optional garnish)

Instructions

  1. Boil your desired amount of rice as per packet instructions
  2. Cook your brocolli (steam / boil / roast) - when ready sprinkle with chilli flakes and a drizzle of olive oil
  3. In a bowl add 200 g plain flour and 2 tablespoon of corn flour - season with 2 teaspoons of all purpose seasoning and mix
  4. In a separate bowl , crack and beat the eggs
  5. Get your diced chicken and coat in the flour mix then the eggs then the flour mix again. Prepare as many as you can fry at once
  6. Heat oil in your wok / deep fryer - enough oil to fry the checken
  7. Fry on a high heat for one minute then reduce to a medium/high heat (to ensure the chicken cooks on the inside
  8. Repeat this process until all your chicken is fried and set it all aside on a plate
  9. Slice up the garlic , red onion and scallions
  10. In a frying pan / wok heat two tablespoons of sunflower oil
  11. Sautee the garlic and oinion until softened
  12. Add your sweet chilli sauce then stir
  13. Add your water then stir - let the sauce simmer on a medium heat for 4 minutes
  14. When the sauce is thick and combined add the soy sauce and stir
  15. Now that everything is ready add the fried chicken to the sweet chilli sauce combine so the chkicken is fully coated in the sauce
  16. Plate your rice , brocolli and chicken - garnish with scallions and sesame seeds
