- Boil your desired amount of rice as per packet instructions
- Cook your brocolli (steam / boil / roast) - when ready sprinkle with chilli flakes and a drizzle of olive oil
- In a bowl add 200 g plain flour and 2 tablespoon of corn flour - season with 2 teaspoons of all purpose seasoning and mix
- In a separate bowl , crack and beat the eggs
- Get your diced chicken and coat in the flour mix then the eggs then the flour mix again. Prepare as many as you can fry at once
- Heat oil in your wok / deep fryer - enough oil to fry the checken
- Fry on a high heat for one minute then reduce to a medium/high heat (to ensure the chicken cooks on the inside
- Repeat this process until all your chicken is fried and set it all aside on a plate
- Slice up the garlic , red onion and scallions
- In a frying pan / wok heat two tablespoons of sunflower oil
- Sautee the garlic and oinion until softened
- Add your sweet chilli sauce then stir
- Add your water then stir - let the sauce simmer on a medium heat for 4 minutes
- When the sauce is thick and combined add the soy sauce and stir
- Now that everything is ready add the fried chicken to the sweet chilli sauce combine so the chkicken is fully coated in the sauce
- Plate your rice , brocolli and chicken - garnish with scallions and sesame seeds
